Übergewicht und Adipositas erhöhen die Risiken für Stoffwechselstörungen und können zu einem Typ-2-Diabetes führen. Deshalb stellen die Behandlung und Prävention von Fettleibigkeit eine große medizinische Herausforderung dar. Häufig werden eine erhöhte körperliche Aktivität und die Reduktion der täglichen Kalorienaufnahme um 25–30 % angeraten. Eine andere Möglichkeit bietet intermittierendes Fasten, also eine Kalorieneinschränkung über bestimmte Zeiten, d. h. an einem oder mehreren Tagen pro Woche oder über mehr als 14 h pro Tag. Tier- und Humanstudien lieferten Hinweise darauf, dass intermittierendes Fasten bei Adipositas zu einer Verringerung der Körperfettmasse sowie zu Verbesserungen der Stoffwechselparameter und der Insulinsensitivität führt. Diese positiven Effekte werden nicht nur allein durch die Abnahme der Körpermasse, sondern auch durch die Aktivierung von Stoffwechselwegen und zellulären Prozessen ausgelöst, die für Fastenbedingungen spezifisch sind. In diesem Artikel beschreiben wir die derzeit bekannten Mechanismen, die durch intermittierendes Fasten induziert werden, und stellen Ergebnisse aus randomisierten kontrollierten Studien am Menschen vor.
Diabetesrisikoscores

Risikoscores werden zur Identifizierung von Hochrisikopersonen für Typ-2-Diabetes (T2DM) eingesetzt, die von Präventionsmaßnahmen profitieren. Der DIfE – DEUTSCHER DIABETES-RISIKO-TEST® (DRT [DIfE: Deutsches Institut für Ernährungsforschung Potsdam‐Rehbrücke]) wird genutzt, um das absolute 5‑Jahres-Risiko für T2DM zu bestimmen. Da die Berechnung auf nichtklinischen Informationen basiert, kann der Test unabhängig von einem Arztbesuch genutzt werden. Als Grundlage für die Entwicklung von Risikoscores dienen Daten aus prospektiven populationsbezogenen Langzeitstudien. Die sehr gute Vorhersagegüte eines Scores sollte, wie im Fall des DRT, in unabhängigen Populationen bestätigt werden. Neben dem Einsatz durch Ärzte/‑innen und zur individuellen Selbstanamnese können nichtklinische Risikoscores im Kontext breiterer, bevölkerungsbezogener Präventionskonzepte und Informationsangebote zur Senkung des Erkrankungsrisikos Anwendung finden. Durch Krankenkassen abrechenbare Präventionsleistungen sollen im Sinne des deutschen Präventionsgesetzes die Integration von gesundheitsförderndem Verhalten in den Alltag unterstützen. Obwohl Übergewicht und Ernährung relevante Lebensstilrisikofaktoren für T2DM sind, beträgt der Anteil der in Anspruch genommenen Präventionskurse in diesem Bereich nur 3 % der abgerechneten Kurse. Entsprechende Empfehlungen in ärztlichen Untersuchungen könnten eine umfangreichere Inanspruchnahme fördern. Die Verwendung von Risikoscores als Grundlage für systematische und gezielte Handlungsempfehlungen hinsichtlich einer Verhaltensprävention könnte dies, wie es bereits in Richtlinien der kardiovaskulären Prävention etabliert ist, darüber hinaus unterstützen. Auch die Weiterentwicklung der Implementationsforschung ist für den effizienten Einsatz von Risikoscores von Bedeutung.

Fettsäurenverteilung
Die Gehalte an den wichtigsten Fettsäuren (FS) sind in • Tabelle 4 und 5 aufgeführt, in g/100 g sowie in Prozent des Fettanteils (Etherextrakt bzw. g FS-Methylester pro 100 g der Summe der FS-Methylester). Erbsen und Ackerbohnen spielen als Fett- und FS-Quelle praktisch keine Rolle. Sojabohnen sind eine wesentliche Quelle für Linolsäure, die häufigste n-6-FS. An zweiter Stelle steht die Ölsäure. Aber auch der Gehalt an der n-3-FS α-Linolensäure (ALA) ist hoch, womit sich Sojaöl in die Reihe der Fette mit mittlerem ALA-Gehalt, wie Raps- und Walnussöl einreiht. Im Gegensatz zu Rapsöl entspricht jedoch das Linolsäure/α-Linolensäure- Verhältnis nicht dem empfohlenen Verhältnis von 5:1 in der Gesamt- Diät [13]. Zum Ausgleich für die Fette aus der übrigen Nahrung (Getreide, Lebensmittel tierischer Herkunft) sollten Pflanzenöle besser noch ein engeres Verhältnis als 5:1 aufweisen. Das trifft für Lupinen-Öl schon eher zu, wenngleich der absolute Beitrag an ALA hier eher gering ist.
Hintergrund: Die Kombination aus Übergewicht/Adipositas und reduzierter Skelettmuskelmasse (Sarkopenie) führt zu einem prognostisch ungünstigen Phänotyp, der als sarkopene Adipositas bezeichnet wird.
Ziel der Arbeit: Ziel dieser Arbeit ist, eine Übersicht über Diagnosekriterien der sarkopenen Adipositas, ihre klinischen Implikationen, die pathophysiologischen Ursachen mit besonderem Fokus auf der subklinischen Inflammation und den verfügbaren therapeutischen Optionen zu geben.
Ergebnisse: In aktuellen Studien werden verschiedene Diagnosekriterien der sarkopenen Adipositas verwendet, was einen Vergleich zwischen den Arbeiten erschwert und in Prävalenzschätzungen von 2–48 % in verschiedenen Studienpopulationen resultiert. Nichtsdestotrotz scheint die sarkopene Adipositas einen Risikofaktor für erhöhte Morbidität und Mortalität darzustellen, wobei kardiometabolische Erkrankungen und funktionelle Einschränkungen am besten erforscht sind. Neben Lebensstil- und genetischen Faktoren werden altersassoziierte endokrine und neuromuskuläre Parameter diskutiert. Sowohl hohes Lebensalter als auch Adipositas führen zu einer subklinischen Inflammation, die über einen fatalen Feedbackmechanismus zum Muskelabbau und zur Zunahme der Fettmasse beiträgt. Hinsichtlich Therapieoptionen stehen derzeit kombinierte Ernährungs- und Bewegungsinterventionen im Vordergrund.
Schlussfolgerung: Die sarkopene Adipositas stellt einen klinisch relevanten Phänotyp dar, dessen Pathogenese aber nur z. T. verstanden ist, was Maßnahmen der Prävention und Therapie begrenzt. Neue Strategien zu Muskelaufbau und Fettreduktion sind daher dringend erforderlich, um gesundheitliche Beeinträchtigungen im höheren Lebensalter zu minimieren.
Selen und Jod sind essenzielle Spurenelemente, die gemeinsam für eine optimale Funktionstüchtigkeit der Schilddrüse erforderlich sind. Der Mangel eines oder beider Elemente führt zu Verschiebungen auf Ebene der Schilddrüsenhormonproduktion mit weitreichenden Konsequenzen für Stoffwechselprozesse, neurologische Entwicklung und Erkrankungen. Auch bei Autoimmunerkrankungen der Schilddrüse spielt die Versorgung mit Jod und Selen eine wichtige Rolle. Als Biomarker für den Selenstatus eignet sich der Gehalt des Gesamtselens oder der des Selenoproteins P im Serum. Zur Bestimmung des Jodstatus wird in der Regel der Jodgehalt im Urin herangezogen. Um den Versorgungszustand an diesen und vier weiteren essenziellen Spurenelementen besser zu erfassen, charakterisiert die Forschungsgruppe TraceAge alters- und geschlechtsspezifische Spurenelementprofile und neue funktionelle Biomarker der einzelnen Spurenelemente. Außerdem sollen Interaktionen weiterer Spurenelemente genauer untersucht werden.
The addition of lysozyme amounting to 1000 mg/l wine does neither effect its total phenol content (Folin-Ciocalteu-Method), nor wine colour (measured by extinction at 512 nm) nor its antioxidative capacity (TEAC-Assay). No covalent binding of wine phenols to the enzyme was observed during lysozyme addition, although non-covalent interactions are possible. Lysozyme activity is not influenced by the presence of malvidin-3-glucoside and resveratrol in model experiments, whereas pH and ethanol content produce a corresponding alteration in lysozyme activity. With regard to red wine, a significant effect was noted in the presence of wine components.
As our climate changes, plant mechanisms involved for dormancy release become increasingly important for commercial orchards. It is generally believed that abscisic acid (ABA) is a key hormone that responds to various environmental stresses which affects bud dormancy. For this reason, a multi-year study was initiated to obtain data on plant metabolites during winter rest and ontogenetic development in sweet cherry buds (Prunus avium L.). In this paper, we report on metabolites involved in ABA synthesis and catabolism and its effect on bud dormancy in the years 2014/15-2016/17. In previous work, the timings of the different phases of para-, endo-, ecodormancy and ontogenetic development for cherry flower buds of the cultivar ‘Summit’ were determined, based on classical climate chamber experiments and changes in the bud’s water content. Based on these time phases, we focused now on the different aspects of the ABA-metabolism. The results show that there is a continual synthesis of ABA about 5 weeks before leaf fall, and a degradation of ABA during ecodormancy and bud development until the phenological stage ‘open cluster’. This is confirmed by relating the ABA content to that of the total precursor carotenoids, neoxanthin and violaxanthin. The tentative monitoring of individual intermediate metabolites revealed that dihydroxyphaseic acid is the most abundant catabolite of ABA and ABA glucosyl ester is in terms of mass intensity, the most abundant ABA metabolite observed in this study. The results suggest that the direct route for ABA biosynthesis from farnesyl pyrophosphate may also be relevant in cherry flower buds.

The application of mass spectrometry for the characterization of food proteins represents one of the most important tools in food chemistry and nutritional science. In the last few years there has been a tremendous development in the classical questions with regard to determination of molecular mass, identification amino acid sequence and structure of proteins. With these technical improvements, it is becoming more and more interesting to characterize the changes involved in proteins embedded in the food matrix as a result of their technological processing, especially in terms of the influence on their functional, nutritional and phsiological properties. Many such posttransational protein modifications occuring due to reactions with other food constituents (e.g. secondary plant metabolites) provide a series of possible fields for application of a sample preparation with a soft ionisation technique using mass spectrometry. The matrix assisted laser desorptions/ionisation ? time of flight ? mass spectrometry (MALDI-TOF-MS) and the surface enhanced laser desorptions/ionisation ? time of flight ? mass spectrometry (SELDI-TOF-MS) have become since than two of the most important methods of choice for solving of such questions and these both techniques have been described here with correponding examples.

Vor dem Hintergrund der Diskussion über die ernährungsphysiologische Bedeutung von Isoflavonen befasst sich die vorliegende Übersichtsarbeit auf der Basis von 186 Literaturquellen mit der Struktur, dem Vorkommen, der Aufnahme, der Biosynthese, der Resorption, dem Metabolismus und der biologischen Wirkung dieser Untergruppen der Pflanzenphenole. Diskutiert werden sowohl positive als auch negative biologische Wirkungen dieser Verbindungen. Strukturabhängig können die Isoflavone mit anderen Lebensmittelinhaltsstoffen in Wechselwirkung treten. With the background of the actual ongoing discussion on the nutritional
