Only recently have new trends in the historiography, by historians of printed books and reading practices, and by social and cultural historians of knowledge, called for a fresh look and opened the way for new approaches. Taking Alexander von Humboldt as a paramount example, who expressly devoted his life to "observing and recording" the world, pen in hand, this paper explores the note-taking practices at work in his travel diaries and notebooks from the perspective of the history of scientific observation and cognitive practices. Four themes are successively considered : the question of method and apprenticeship ; the timing of note-taking practices ; the nature and status of the data jotted down on the page ; finally, their uses in the production of scientific knowledge. Il {\´e}largit de fa{\c{c}}on programmatique la perspective des Indes occidentales avec celle des Indes orientales et donne au commerce - comme cela figure d{\´e}j{\`a} dans le titre m{\^e}me de l'œuvre - une place importante et m{\^e}me d{\´e}cisive pour les bouleversements qui avaient transform{\´e} le monde de fa{\c{c}}on si fondamentale depuis la fin du XVe si{\`e}cle. Le discours sur les r{\´e}gions extra-europ{\´e}ennes et en particulier sur l'Am{\´e}rique avait au seuil du XIXe si{\`e}cle commenc{\´e} {\`a} se transformer de fa{\c{c}}on fondamentale avec la Voyage dans les R{\´e}gions {\´e}quinoxiales du Nouveau Continent, publi{\´e} entre 1805 et 1838 comme un gigantesque livre de voyage avec trente in-folio grand format par Alexander von Humboldt. Humboldt avait d{\´e}velopp{\´e} dans ce cadre depuis 1805 une quantit{\´e} incroyable d'{\´e}tudes les plus diverses qui en tant que science globalis{\´e}e et globalisante discutaient sans cesse ses propres r{\´e}sultats de recherche dans une perspective transdisciplinaire et comparative {\`a} un niveau mondial.
